After relocating to the former SUNY Canton College Farm, Cornell Cooperative Extension of St. Lawrence County began restoring the maple operation with support from the St. Lawrence County Maple Producers Association as an educational and demonstration facility. The basic system at the Extension Learning Farm consists of a 4 x 12 foot oil-fired evaporator, with filtering and finishing systems in the sugarhouse at the Extension Learning Farm, which is adjacent to an updated classroom. Some 650 taps in the Extension Learning Farm hardwood forest yield sap by tubing and some buckets to several sugarbush collecting tanks, which are then gathered by trailer tank. 4-H Club Members, Canton High School FFA, and Conservation Class students get involved all along the sugaring process for the educational experience and will assist with Maple Weekend™. In its third season of restoration, this educational facility will show where maple syrup comes from and how it is made, on its way from forest to table.
